He would learn from the Tao of JKD, movies etc. Maybe some things were lost or very hard to find and he didn't have much resources to learn from. there were not much resources to learn from in Cowboy Bebop's future. he didn't learn about JKD/Lee enough, but I think this is almost not true as we can see that he masters JKD 2. If Spike treats Lee like a perfect god then I think of some possibilities that might explain this: 1. I only remember him saying things that Lee taught, like being like water. I don't remember though until what point Spike idolizes him if he negates Lee's flaws for example. I understand your point and I agree with it. TL DR: it probably has to do with his Jeet Kune Do practice. And it's important to say that I started practicing JKD because of Spike and only after a couple of years into the practice I started to understand what JKD was about :) I'm saying that because I practiced JKD myself for 5 years and I can say that my life changed because of it. With all that said, this is a mere theory. And it not only affects your practice and your fighting style, but it can also affect the way you deal with other things. And it's hard not to see Lee as a master and to idolize him, because JKD philosophy, which is based upon Eastern philosophy, like Taoism, is very important to develop your practice. He studied a lot before creating JKD and once you start going further with the practice it's inevitable that you'll start learning about the philosophy behind JKD and about Lee as well.

Lee wasn't only a skilled martial artist with impressive muscles. We don't know if Spike started to practice JKD and then to idolize Lee or the other way around, but one important thing to notice is that JKD is a martial art with a deep philosophical support.
